Samford Grads Open Stylish
Chattanooga Restaurant
The next time you're in Chattanooga,
you might want to check out St. John's Restaurant. It's run by
a pair of Samford grads, Danny Lasseter '92 and Nathan Lindley
'96.
The stylish restaurant opened last fall in the historic St. John's
Hotel on Market Street. The hoopla of a new place to eat in a
once-abandoned hotel attracted the crowd early. "But the
food keeps them coming back," said the Chattanooga Times.
Lasseter is executive chef, and his background is impressive.
He attended the Culinary Institute of America and worked at the
Plum Bush Inn in New York after finishing Samford. Then he worked
as a chef at Commander's Palace in New Orleans and Canoe in Atlanta.
Lindley serves as general manager of St. John's. A Chattanooga
native, he developed the idea of opening the restaurant and sought
out Lasseter as executive chef.
"We've actually reached a break-even point in the first
six months," Lindley said in February. "The crowds
have gotten larger, and it's almost all because of word of mouth."
Lasseter describes the restaurant as a French bistro. The menu
changes weekly and emphasizes fresh, seasonal products. A sampling
of specialties: braised veal cheeks with potatoes and onion pepper
chutney, roasted rabbit with agnolotti pasta, braised striped
bass with red beet risotto. The most popular dessert: a chocolate
molten souffle.
